Mirin glazed salmon

Sweet and savoury salmon with glossy rich sauce makes another great staple for dinner or lunch. Another easy recipe to execute that is impressive and yummy at the same time. Serve with rice and pickled cucumber salad on the side.

 

salmon fillets

60 ml mirin

60 ml soy sauce

30 ml rice vinegar

50 g light brown sugar

2 tsp veg oil

2 cloves of garlic, thinly sliced

Spring onions, green parts only, sliced finely - to serve

 

1. Combine mirin, soy sauce, rice vinegar and sugar, pour over salmon fillets and let marinate for 10 mins on each side.

2. Heat the non-stick on to hot, add oil and garlic for about 20 secs and add salmon fillets skin down. Cook for about 1 min, add the marinade, put the lid on and let steam through for about 5-7 mins. You can check the doneness by inserting the knife gently in the thickest part of the salmon fillet – if cooked through it will flake through.

4. Plate the salmon up and give another 1-2 mins for the sauce to thicken up. Drizzle the sauce over the salmon. Sprinkle the sliced spring onions.

5. Serve with rice and Japanese style pickled cucumber.
